Homemade Salad Croutons

For some reason I have been craving salads for dinner each night. This is a nice break from wanting meat (and only meat) at EVERY meal for the last 7 months!

So this week I whipped up some homemade croutons because I love them in my salads...but hate the store bought kind since they are so hard and full of a million ingredients.

Ingredients (this makes about 4 cups of croutons)

4 slices of Texas toast (or any other bread you prefer)

This is also a great way to use the ends of the bread loaf

1/4 c olive oil

1/2 tsp salt

1/2 tsp pepper

1 tsp dried oregano or parsley

1 tsp ranch dip seasoning (optional)

1. Coarsely chop the bread (about 16 cubes per slice)

2. Whisk together other ingredients and pour into bottom of a bowl.

3. Pour bread cubes into bowl and stir into oil mixture. Lightly toss so that each piece has some of the mixture on it.

4. Lay out the bread on a baking sheet (I line mine with foil just to prevent a mess).

5. Bake at 400 degrees for 3-4 minutes. Flip over bread pieces and bake another 3-4 minutes (or until bread is nice and toasted).

Let them cool and enjoy! I store them in a ziplock bag. So far everyone who has tried these has loved them. They offer the perfect crunch to a salad without breaking off a piece of your tooth:)
